Cinnamon stars are my absolute favorite Christmas cookies. They are therefore an absolute must during Advent.
Baking vegan cinnamon stars is very easy. Besides the classic recipe with icing, I've also created a recipe for healthy raw cinnamon stars for you.
And for those who like to make it more elaborate: The raw food version can also be baked, so you get the best of both worlds ✨
CLASSIC CINNAMON STARS - VEGAN, GLUTEN-FREE & OIL-FREE
Ingredients (makes about 24 cinnamon stars)
3 cups ground almonds
1 tbsp cinnamon
1 tbsp lemon juice
1/3 cup maple syrup or other liquid sweetener
1 tbsp water
Molding:
1/2 cup powdered sugar
1/2 cup lemon juice
preparation
1. Put all the ingredients (except the topping) into a bowl and stir/knead them into a smooth dough.
2. Place the dough in the refrigerator (or outside) for about 30 minutes.
3. Roll out the dough to a thickness of approximately 6 mm and cut out the stars using a cookie cutter.
4. Bake the cinnamon stars for 6-8 minutes at 200°C (top/bottom heat)
Once the cinnamon stars have cooled down:
5. Mix the powdered sugar and lemon juice for the glaze. Let the glaze dry completely before placing the cinnamon stars in a tin.
Tip: If the dough is too sticky, you can also roll it out between two sheets of baking paper / silicone baking mats :)
RAW FOOD CINNAMON STARS - VEGAN, GLUTEN-FREE & NO REFINED SUGAR
Ingredients (makes about 14 cinnamon stars)
1 1/2 cups ground almonds
2 tablespoons cinnamon
1 tbsp almond butter (brown)
2 tbsp water
lemon juice
Molding:
2 tbsp coconut butter
6 tbsp coconut milk (Thai)
3 tablespoons coconut oil
Approximately 10 drops of lemon juice
2. Roll out the dough to a thickness of approximately 6 mm and cut out the stars using a cookie cutter.
3. Put the cookies in the refrigerator.
Tip: You can also bake the raw cinnamon stars (without icing) at 200°C for 4-6 minutes. They taste just as delicious as the original :)
