Cinnamon stars are my absolute favorite Christmas cookies. They should therefore not be missing during the Advent season.
Baking vegan cinnamon stars is very easy. In addition to the classic recipe with icing, I have also created a recipe for healthy raw cinnamon stars for you.
And if you like it elaborate: You can also bake the raw food version, so you get the best of both worlds ✨
CLASSIC CINNAMON STARS - VEGAN, GLUTEN FREE & NO OIL
Ingredients (makes about 24 cinnamon stars)
3 cups ground almonds
1 tbsp cinnamon
1 tbsp lemon juice
1/3 cup maple syrup or other liquid sweetener
1 tbsp water
Molding:
1/2 cup powdered sugar
1/2 cup lemon juice
preparation
1. Put all the ingredients (except for the icing) in a bowl and stir/knead them into a regular dough
2. Lay the dough for about 30min. in the fridge (or outside)
3. Roll out the dough to a thickness of approx. 6 mm and cut out the stars with a cookie cutter
4. Bake the cinnamon stars for 6-8 minutes at 200°C (top/bottom heat)
As soon as the cinnamon stars have cooled:
5. Mix together the powdered sugar and lemon juice for the frosting. Let the icing dry well before you put the cinnamon stars in a tin.
Tip: If the dough is too sticky, you can also roll it out between two pieces of baking paper / silicone baking mats :)
RAW FOOD CINNAMON STARS - VEGAN, GLUTEN FREE & WITHOUT INDUSTRIAL SUGAR
Ingredients (makes about 14 cinnamon stars)
1 1/2 cups ground almonds
2 tbsp cinnamon
1 tbsp almond butter (brown)
2 tbsp water
lemon juice
Molding:
2 tbsp coconut butter
6 tablespoons coconut milk (Thai)
3 tbsp coconut oil
About 10 drops of lemon juice
2. Roll out the dough about 6 mm thick and cut out the stars with a cookie cutter
3. Put the cookies in the fridge
Tip: You can also bake the raw cinnamon stars (without glaze) at 200°C for 4-6 minutes. They taste just as delicious as the original :)
