Today there is something for your hungry bellies: super delicious vegan & gluten-free pancakes!
They're easy to make and perfect for a lazy Sunday morning.
Of course, the whole thing also works with wheat flour, you just have to play around with the amount of liquid, since gluten-free flours tend to need more liquid.
PANCAKES - VEGAN & GLUTEN FREE
Makes about 7 small pancakes
1 mashed banana
1/2 cup almond milk (or other non-dairy milk)
1 tsp coconut oil
1 tsp maple syrup
1/2 tsp ground vanilla (extract works too)
1/2 tsp cinnamon
1 1/2 tsp baking powder
1/4 cup white rice flour
1/3 cup buckwheat flour
peanut or almond butter
1. Mix all liquid/wet ingredients in a bowl.
2. Continue to add the other ingredients, stirring after each one.
3. Fry the batter in the pan with some coconut oil.
4. When they are no longer runny on the top, it's time to flip them ;)
Add your favorite toppings and you're done. Cheers!
By the way, they also taste really good cold :) But you can also simply warm them up in the toaster!
