Coconut candy bar - vegan

Summer, sunshine, a light breeze blowing through your hair and a cold coconut chocolate bar for dessert.

It brings back memories and holiday feelings in me. With you, too?

 

The well-known chocolate bars with coconut are real calorie bombs and are full of unpronounceable ingredients. But we have the solution: just do it yourself!

It's actually very easy and definitely doesn't require any training as a confectioner :)

Recipe, vegan bounty, coconut candy bar, no bake

These bars also have an extra layer of hemp seeds, almonds and chia seeds, so they're packed with omegas and protein.

Coconut Candy Bar

Makes about 15 bars (can be easily frozen)

Ingredients

2 cups shredded coconut
1/4 cup maple syrup
1 tbsp coconut oil
1 tbsp coconut butter
1 tbsp coconut flour
1 1/4 cup coconut milk

1/4 cup maple syrup
1/4 cup hemp seeds
1 cup ground almonds
1/2 tsp vanilla
1 tbsp chia seeds
1 tbsp coconut oil

chocolate glaze

3/4 cup coconut oil
9 tbsp cocoa powder
1 1/2 tsp vanilla
3 tablespoons maple syrup

preparation

1. Mix all the dry ingredients from the first section in a bowl and add the wet ingredients from the first section. Stir well and set aside.

2. Repeat step 1 with the second batch of ingredients in a separate bowl.

3. Line a mold with baking paper (e.g. small gratin mold) or use a silicone mold and press in the nut filling (section 2).

4. Now press the coconut filling on top (section 1). Press well!

5. Place in the freezer for about 1 hour, then carefully cut the bars.

6. Place the bars back in the freezer until completely frozen. 7. Cover them with the chocolate icing.
