Elderflower Watermelon Popsicles

The white, cloud-like shrubs are in full bloom and emit their unique fragrance. Combined with sweet watermelon, they make a welcome refreshing ice cream in summer ;-)

For this recipe, I use elderflower syrup: you can easily make it yourself or buy it. If you've never made syrup yourself, it's very easy and doesn't require any special knowledge or tools.

To pour the ice cream, you need an ice pop mold. In our shop, you'll find a 100% plastic-free and reusable stainless steel mold. Even the sticks are plastic-free & reusable.

Now, without further ado, let's get straight to the recipe:

Elderflower Watermelon Popsicles

Ingredients

1.5dl elderflower syrup (homemade or store-bought)
1/2 lemon (juice)
1/4 medium watermelon (seeded)
1 pinch of beetroot powder (optional)


Preparation

  1. Deseeda watermelon and place it in the blender with the lemon juice.
  2. If necessary, add a little beetroot powder. This gives it a bright red color, but can easily be omitted.
  3. Mix the blended watermelon with the elderflower syrup.
  4. Stir well and pour the liquid into the popsicle molds.
  5. Freeze the ice cream for 24 hours.
Enjoy!

 

Tips:
- When tasting, the mixture should taste too sweet. Freezing greatly reduces the sweetness. So, "oh that's much too sweet" is probably just sweet enough ;-) If you don't like it so sweet, you can add a little more watermelon.
- If you have made too much liquid for your molds, you can either store it in the refrigerator for the next day and make new popsicles after enjoying the first ones. Or you can mix the syrup with sparkling water and garnish with peppermint to make a delicious mocktail.
