The reusable proofing basket is made of rattan, with a matching cotton cover to protect the dough during fermentation. The basket is handwoven and biodegradable.

The round proofing basket made of rattan protects the bread dough from drying out and provides stability at the same time. This gives the loaf its typical grooved shape during the fermentation process.

What is the difference between this process and the fermentation process in a kitchen bowl?
In the round proofing basket, the bread dough becomes fluffier at the end of the fermentation process and has the typical baker's pattern.

Flour, fill, let rise, brush out

Depending on the type of bread, the loaf should ferment in the proofing basket for several hours, depending on the recipe. For more elaborate sourdough breads, this can even happen overnight. The proofing basket has the advantage of protecting the dough very well from drying out, which is very important when baking bread. Before each fermentation, the proofing basket should be free of any dough residue; a light coating of flour from the previous fermentation is not a problem.

After the fermentation process, the proofing basket should be thoroughly tapped out. For larger pieces of dough, these can be brushed out dry with a stiff brush. For stubborn dough residue, the proofing basket can also be wiped with a damp cloth or briefly rinsed, but this should not be done regularly. After this cleaning process, the proofing basket should be allowed to dry completely. Under no circumstances should several proofing baskets be stacked inside each other if they are still slightly damp. This can lead to mold growth.

A tip from the Backefix team: after tapping out and cleaning, you can let the proofing basket dry in the residual heat of the oven.
