Christmas is coming sooner than you think. And suddenly you need a last-minute gift. But don't worry, our granola is quick to make and you probably already have many of the ingredients at home.
And for all those who already have their gifts together; Give yourself a present and look forward to a Christmas muesli every morning :)
Gingerbread Granola
Ingredients
2 cups (gluten-free) oatmeal
1/2 cup puffed quinoa
2 tbsp chia seeds
1/3 cup pumpkin seeds
1/2 cup chopped almonds
2 tbsp cocoa powder
1/3 cup maple syrup
3 tablespoons brown almond butter
1 tbsp gingerbread spice
1 tsp dried ginger (optional if your gingerbread spice doesn't already contain ginger)
preparation
1. Mix all dry ingredients in a bowl.
2. Add the maple syrup and almond butter and stir until evenly combined. The mass should stick together easily and form small lumps, i.e. it should not be too dry or too moist.
3. Spread everything on your baking tray (grease beforehand), baking paper or baking mat and bake at 120°C for 20 minutes.

Tip: Just make double the amount (use 2 baking trays, otherwise the granola won't be as crispy) and freeze part. It keeps for up to 3 months in the freezer and only about 1 month in the cupboard.
